A classic French dessert that captivates with its sweet and smooth flavor.
Preparation time: 1 hour + cooling time
Serving size: 6 servings
Ingredients:
- 1 dl sugar (for caramel)
- 4 dl milk
- 3 eggs
- 1 dl sugar
- 1 tsp vanilla essence or 1 vanilla bean
- A pinch of salt
Instructions:
1. Prepare the caramel: Place sugar in a saucepan and heat over medium until it melts and turns golden brown. Quickly pour the caramel into the bottom of the ramekins and let it cool.
2. Heat the milk in a saucepan. If using a vanilla bean, split it and add to the milk, simmer for a moment. Remove the vanilla bean.
3. In a bowl, whisk the eggs and sugar together until the mixture is pale and fluffy.
4. Gradually add the hot milk to the egg mixture while stirring continuously.
5. Pour the mixture over the caramel in the ramekins.
6. Bake in a water bath at 160°C (320°F) for about 40-50 minutes until the custard is set.
7. Allow to cool at room temperature and refrigerate for at least 4 hours or overnight.
8. Invert the custards onto a plate and serve.
