A delicious and traditional dessert perfect for celebrating Mother's Day. Serve it with juicy strawberries! Preparation Time: 1 hour + chilling
Serving Size: 6 servings
Ingredients:
- 2 dl sugar (for caramelizing the dishes)- 4 dl cream (or 2 dl cream + 2 dl milk)
- 1/2 dl sugar
- 1 vanilla bean
- 4 eggs (organic)
For the Juicy Strawberries:
- Diced strawberries
- Sugar
- Small blackcurrant leaves (or mint/basil leaves)
Instructions:
1. Melt the sugar in a saucepan until it turns golden yellow. Pour the mixture into the bottoms of the ramekins, tilting them to coat the bottoms and sides with caramel.2. Split the vanilla bean lengthwise, heat the cream and vanilla until almost boiling. Remove from heat and take out the vanilla bean. Add the sugar and eggs, whisk until smooth.
3. Pour the mixture into the prepared ramekins.
4. Place the ramekins in a baking dish and pour hot water into the dish halfway up the sides of the ramekins.
5. Bake at 175 °C (350 °F) for 40-50 minutes, until the custards are set.
6. Allow to cool at room temperature, then transfer to the refrigerator until ready to serve.
7. To serve, run a sharp knife around the edge of each ramekin and invert onto serving plates.
For the Juicy Strawberries:
1. Roll three blackcurrant leaves tightly and slice them thinly.
2. Sprinkle sugar over the strawberries and add the chopped leaves.
3. Let the mixture sit in the refrigerator for an hour until the strawberries release their juices. Mix and serve alongside the custard.
