A delicious German street food featuring spiced sausages and a rich curry ketchup, paired beautifully with roasted young cabbage.

Ingredients:

For the Currywurst:
- 1 pack German bratwursts
For the Currywurst Sauce:
- 2 tablespoons canola oil
- 1 yellow onion, finely chopped
- 1 tablespoon curry powder
- 1 teaspoon chili powder
- 1 can (400 g) peeled tomatoes with juice
- 100 ml ketchup (Heinz)
- 2 teaspoons Dijon mustard
- 1 tablespoon brown sugar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon lemon juice
- 1/3 teaspoon fine sea salt
- Freshly ground black pepper to taste
For the Roasted Young Cabbage:
- 1 large young cabbage
- 1 tablespoon white wine vinegar
- 50 ml olive oil
- Salt to taste
- Freshly ground black pepper to taste
- Maple syrup for drizzling

Instructions:

1. Prepare the Currywurst Sauce:
- Heat canola oil in a saucepan over medium heat.
- Sauté the chopped onion until soft but not browned.
- Add curry powder and chili powder, stir, and cook for a couple of minutes.
- Add canned tomatoes, ketchup, mustard, brown sugar, and Worcestershire sauce. Mix well.
- Let the sauce simmer gently for 20–30 minutes, stirring occasionally. Add lemon juice and salt towards the end.
2. Prepare the Roasted Young Cabbage:
- Cut the cabbage into thin wedges, keeping them attached at the core.
- Place the wedges on a baking tray.
- Mix white wine vinegar and olive oil, drizzle over the cabbage wedges, and season with salt and black pepper.
- Roast in a preheated oven at 200°C (400°F) for about 30 minutes until the cabbage is tender and browned. Drizzle with maple syrup before serving.
3. Cook the Bratwursts:
- Grill or pan-fry the bratwursts until golden brown and heated through.
4. Serving:
- Slice the bratwursts and serve them with the curry sauce. Accompany with roasted young cabbage on the side.
