Ingredients:
- 250 g pasta (e.g., penne or fusilli)
- 200 g fresh spinach
- 150 g feta cheese
- 200 ml heavy cream
- 2 garlic cloves (minced)
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve about 100 ml of the pasta water.
2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until golden brown.
3. Add fresh spinach to the skillet and cook until wilted.
4. Pour in the heavy cream and mix well. Let it simmer for a few minutes.
5. Crumble the feta cheese into the sauce and stir until partially melted.
6. Add the cooked pasta to the skillet and mix. If needed, add a bit of the reserved pasta water for a creamier sauce.
7. Season with salt and black pepper to taste.
8. Serve immediately, garnished with fresh basil if desired.
