Ingredients:
- 1.5 cups couscous - 2 cups water
- 1 tablespoon olive oil
- 1/2 cup pomegranate seeds
- 1/2 cup pistachios, chopped
- 100 grams feta cheese, crumbled
- 1/4 cup fresh mint, chopped
- 1/4 cup parsley, chopped
- Salt and pepper to taste
Instructions:
1. In a saucepan, bring water to a boil and stir in the olive oil. Once boiling, add the couscous, stir, and remove from heat. Cover and let it sit for about 5 minutes to allow the couscous to absorb the water. 2. After the couscous has rested, fluff it with a fork. Add in the pomegranate seeds, chopped pistachios, crumbled feta, chopped mint, and parsley. Mix well to combine.
3. Season with salt and pepper to taste. Serve warm or at room temperature alongside grilled lamb or as a refreshing side dish.
