Easy Couscous with Sautéed Vegetables

Ingredients:
- 1 dl couscous
- 1 ½ dl water
- 2 garlic cloves, crushed
- 1 dl mixed sautéed vegetables (e.g., bell pepper, zucchini, onion)
- 1 tbsp olive oil
- Fresh herbs (e.g., parsley, basil)
- Salt and pepper to taste
- Optional: nuts, cheese, or sprouts
- Boiled egg (optional)
Instructions:
1. Heat the olive oil in a pan and add the crushed garlic. Sauté for a moment until fragrant.
2. Add the sautéed vegetables to the pan and heat them thoroughly.
3. In a pot, bring the water to a boil and add the couscous. Let it sit for a while until the couscous has absorbed the water.
4. Combine the couscous, sautéed vegetables, and fresh herbs in a bowl. Season with salt and pepper.
5. Serve warm, garnished with nuts, cheese, or sprouts. You can also add a boiled egg on top if desired.
