Pear-Oat Sourdough Bread

A delicious and unique bread made with pears and oats, perfect for enjoying fresh with butter. Preparation Time: 24 hours (including resting and rising)
Serving Size: 10 slices
Ingredients:
- 340g lukewarm water
- 80g active sourdough starter
- 500g high-quality wheat flour (300g organic wheat flour, 150g sifted wheat flour, 50g organic whole wheat flour)
- 2 tbsp wheat bran
- 100g pear
- 1 dl boiling water
- 50g oat flour
- 12g salt
- 50g water
Instructions:
1. Start the preparation a day in advance; begin in the morning for baking the next morning or early afternoon.
2. Take the active sourdough starter from the fridge, mix it with flour and water, and let it activate for several hours until bubbly and doubled in size.
3. In a bowl, measure lukewarm water and mix in 80g of the starter. Return the remaining starter to the fridge.
4. Add the flours and bran to the water-starter mixture, and let it rest for 1-2 hours.
5. Peel and dice the pear, pour 1 dl of boiling water over it, and let it steep.
6. In a separate bowl, measure the oat flour and salt, then mix in 50g of boiling water.
7. After an hour, add the oat mixture to the dough and knead until well combined. Let it rest for 30-60 minutes.
8. Fold the dough several times and incorporate the drained pear pieces. Allow it to rest again.
9. When the dough is elastic, shape it into a rectangle, folding the edges in. Roll the dough until the surface is smooth.
10. Dust a tea towel and place it in a basket. Turn the dough into the basket, seam side down, and cover with the towel. Let it rise in the fridge overnight.
11. Take the dough out and let it rise in a warm place for 2-3 hours.
12. Preheat the oven to 250°C (482°F) and place a hot bowl of water inside.
13. Flip the dough onto parchment paper, score the top with a few cuts, and place it in the oven.
14. Bake for 15 minutes, remove the water bowl, lower the temperature to 200°C (392°F), and bake for another 15 minutes.
15. Remove the bread from the oven and let it cool without a towel. Resist slicing before serving.
