Ingredients:
- 4 slices of bread (white or whole grain)
- 2 eggs
- 1 avocado
- 1 tomato
- Salt and pepper to taste
- Fresh herbs (e.g., basil or parsley)
- Olive oil
Instructions:
1. Toast the bread slices to your liking.
2. Boil the eggs to your desired doneness (about 6-8 minutes).
3. Cut the avocado in half, remove the pit and peel. Mash the avocado in a bowl and season with salt and pepper.
4. Slice the tomato.
5. Spread the mashed avocado on top of the toasted bread.
6. Add the sliced tomato on top of the avocado.
7. Peel the boiled eggs and cut them in half. Place the eggs on the bread plate.
8. Garnish with fresh herbs and drizzle a little olive oil on top.
