This recipe offers a flavorful journey into the world of chilies and fruits, creating two distinct jams: a sweet orange and a spicier red. Perfect for spreading on bread, enhancing desserts, or adding to your recipes.

Ingredients:

Orange Chili Jam:
- 800 g orange bell peppers
- 100 g chili peppers (e.g., Aji Fantasya)
- 40 g ginger
- 350 ml apple cider vinegar
- 1 kg jam sugar
- 50 ml lime juice
Red Chili Jam:
- 700 g red bell peppers
- 100 g chili peppers (e.g., Aji Norteno)
- 40 g ginger
- 350 ml apple cider vinegar
- 333 g jam and marmalade sugar
- 50 ml lemon juice
- 1 tsp salt

Instructions:

1. Chop the orange and red bell peppers and chilies into small pieces, removing seeds and white parts.
2. Blend the peppers and chilies into a puree using an immersion blender or food processor.
3. In a pot, combine the puree, apple cider vinegar, and finely grated ginger. Heat to a boil.
4. Add jam sugar and lime/lemon juice (and salt for the red jam) to the pot. Stir until the sugar is completely dissolved.
5. Cook the mixture for about five minutes.
6. Remove the pot from the heat and let it cool for about five minutes.
7. Pour the jam into sterile jars and seal tightly.
