Mushroom Pasta

A delicious and quick mushroom pasta perfect for a weekend dinner or busy weeknights. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 200 g fresh mushrooms, sliced
- 2 garlic cloves, minced
- 1 onion, finely chopped
- 2 tbsp olive oil
- 100 ml cream
- 50 g Parmesan cheese, grated
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain and reserve some pasta water.
2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sautéing for about 3-4 minutes until softened.
3. Add the sliced mushrooms to the skillet and cook for about 5-7 minutes until golden brown.
4. Pour the cream into the mushroom mixture and stir well. Let it simmer on low heat for about 2-3 minutes.
5. Add the cooked pasta to the skillet and mix everything together. If the mixture is too dry, add a bit of the reserved pasta water.
6. Season with salt and black pepper. Stir in the grated Parmesan cheese.
7. Serve immediately, garnished with fresh parsley.
