A delightful apple cake that is soft and fluffy, perfect for dessert or a sweet snack. Preparation Time: 15 minutes

Ingredients:
- 3 dl diced apples
- 2 dl sugar
- 4 eggs
- 1½ tsp baking powder
- 1 dl potato flour
- 2 dl all-purpose flour
Instructions:
1. Peel and dice the apples into small cubes.
2. In a mixing bowl, whisk the eggs and sugar together until light and fluffy.
3. Gradually add the combined flours and baking powder to the egg mixture, stirring until well incorporated.
4. Gently fold in the diced apples until evenly distributed in the batter.
5. Pour the batter into a greased and breadcrumb-dusted ring mold.
6. Bake in the lower part of the oven at 175°C (350°F) for about 45 minutes, or until a toothpick inserted in the center comes out clean.
