A delightful coffee cake that combines the sweetness of dates with the tartness of apples. A splash of alcohol makes it special, perfect for your coffee table. Preparation Time: 1 hour
Serving Size: 10-12 servings
Ingredients:
- 200 g pitted dates
- 2 dl water
- 100 g butter
- 1 dl sugar
- 2 dl brown sugar
- 3 eggs
- 3 dl all-purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 2-3 tart apples (peeled and diced)
- 1 dl rum or brandy (optional)
Instructions:
1. Cook the dates in water for about 10 minutes until soft. Blend the dates into a smooth puree.
2. In a bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. In a separate bowl, mix the dry ingredients (flour, baking powder, and cinnamon) and gradually add to the wet mixture, stirring until smooth.
5. Gently fold in the date puree, diced apples, and alcohol if using, until well combined.
6. Pour the batter into a greased and floured cake pan.
7. Bake at 175°C (350°F) for about 45-50 minutes, or until a toothpick comes out clean.
8. Allow the cake to cool before serving.
