A delicious, sweet and spicy chutney perfect for enhancing chicken dishes, marinades, and sauces. Easy to make and stores well. Preparation Time: 40 minutes
Serving Size: About 6-8 jars
Ingredients:
- 1 red onion- 1–2 garlic cloves
- 1 red chili pepper
- 2 cm piece of fresh ginger
- 600 g apples
- ½ dl water
- ½ tsp salt
- 1 ½ tbsp balsamic vinegar
- 3 ½ dl preserving sugar
Instructions:
1. Peel and finely chop the red onion and garlic cloves.2. Halve the chili pepper, remove seeds, and chop finely.
3. Peel and grate the fresh ginger.
4. Wash the apples, remove the core, and dice them.
5. Transfer all ingredients, except for the preserving sugar, to a stainless steel pot.
6. Simmer on low heat until the apples have softened, about 20 minutes.
7. Blend the mixture with an immersion blender. For a chunkier chutney, blend just briefly.
8. Return the pot to the stove and add the preserving sugar, mixing well.
9. Simmer on low heat for another 10 minutes.
10. Allow the chutney to cool slightly and pour it into pre-heated glass jars.
11. Store the chutney in a cool place.
