A delicious and sweet apple cheesecake bar recipe that's easy to make and perfect for coffee breaks. Leftover pieces can be frozen for later use. Preparation Time: 1 hour

Ingredients
Crust: - 2 ½ cups all-purpose flour
- 1 ¼ cups brown sugar (such as demerara or brown sugar)
- 1 ¼ cups softened butter
Cheesecake Filling:
- 21 oz cream cheese, softened
- ½ cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 4-5 medium apples, peeled and diced
Instructions
1. Preheat the oven to 350°F (175°C). Grease and flour a baking dish approximately 8x12 inches. 2. Prepare the crust: In a bowl, mix together the flour and brown sugar. Add the softened butter and knead into a dough.
3. Press the dough evenly into the bottom of the baking dish.
4. Prepare the cheesecake filling: In a bowl, beat the softened cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
5. Gently fold the diced apples into the cheesecake filling.
6. Pour the cheesecake filling over the crust in the baking dish.
7. Bake in the oven for about 30-35 minutes, or until the filling is set and the top is a beautiful golden brown.
8. Allow to cool before cutting into bars. Serve and enjoy!
