Ingredients:
- 800 g herring fillets
- 3 dl rye flour
- 1 tbsp salt
- 1 tsp white pepper
- Fresh dill
- Butter for frying
Instructions:
1. Place the herring fillets skin side down on a piece of parchment paper.
2. Sprinkle salt, white pepper, and fresh dill over the fillets.
3. Stack two herring fillets together, ensuring the skin side is on the outside.
4. In a bowl, mix the rye flour, salt, and white pepper.
5. Dip each herring patty in the rye flour mixture, making sure both sides are coated.
6. Heat butter in a frying pan and fry the herring patties on both sides until golden brown.
7. Serve warm with mashed potatoes.
