A delicious pulled salmon burger that combines spicy salmon with a refreshing fennel salad. Quick and easy to prepare, making it a great option for busy days. Preparation Time: 1 hour
Serving Size: 6 servings
Ingredients:
- 3 tbsp sriracha sauce
- 2 tbsp dried thyme
- 2 tbsp cumin
- ½ tbsp salt
- 2 limes
- 2 tbsp white wine vinegar
- 1 whole salmon fillet (2-3 lbs)
- 1 small fennel bulb, thinly sliced
- ½ lemon juice
- 6 burger buns
- BBQ sauce
Instructions:
1. Preheat the oven to 350°F (175°C) and grease a baking dish with canola oil.
2. In a bowl, mix together the sriracha, thyme, cumin, salt, juice of 1 lime, and white wine vinegar.
3. Place the salmon fillet in the baking dish skin side down and spread the spice mixture evenly over the top.
4. Bake the salmon in the oven for about 30-35 minutes, until cooked through but still moist.
5. Rinse and slice the fennel as thinly as possible. Squeeze lime and lemon juice over the fennel and season with salt.
6. Slice the burger buns in half and layer with lettuce, cucumber, pulled salmon, fennel salad, and BBQ sauce.
