A delicious Vietnamese sandwich combining crispy bread, flavorful pulled oats, and fresh vegetables. Perfect for busy days and a treat for the whole family. Preparation Time: 30 minutes

Ingredients:
- 4 gluten-free baguettes (e.g., Schär)- 400 g pulled oats
- 1 dl chili mayonnaise (or Poppamiehen garlic-flavored mayonnaise)
- 1 carrot, thinly sliced
- 1 radish, thinly sliced
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp fish sauce (optional)
- 1 tbsp coconut sugar
- Oil for frying
Instructions:
1. Heat oil in a frying pan over medium heat.2. Add pulled oats to the pan and sauté for about 5 minutes.
3. In a bowl, mix together soy sauce, lime juice, fish sauce, and coconut sugar to make the sauce.
4. Pour the sauce over the pulled oats and stir well. Cook for a few more minutes.
5. Slice the baguettes open and fill them with the pulled oat mixture.
6. Top the baguettes with chili mayonnaise and the sliced carrots and radishes.
7. Serve immediately and enjoy!
