- 2 baguettes or rolls - 1 cup mayonnaise (or plant-based alternative)
- 1 carrot, julienned
- 1 daikon radish, julienned
- 1-2 tablespoons sugar
- 1 cup vinegar (e.g., rice or apple cider vinegar)
- 1 teaspoon cinnamon
- 1 teaspoon grated ginger
- Salt and pepper to taste
- Fresh cilantro
- Optional: sliced ham, chicken, shrimp, or salmon
Instructions:
1. Prepare the pickling brine: In a bowl, mix vinegar, sugar, cinnamon, ginger, salt, and pepper. Add the julienned carrots and daikon radish. Let it marinate for about 15 minutes.2. Slice the baguettes or rolls in half and spread mayonnaise on the inside.
3. Layer the pickled vegetables between the bread.
