Ingredients:
- 200 g rice papers
- 150 g rice noodles
- 200 g cooked shrimp
- 100 g carrots (julienned)
- 100 g cucumber (julienned)
- 50 g fresh mint
- 50 g fresh cilantro
- 50 g lettuce (e.g., iceberg)
- Soy sauce for serving
- Peanut butter (optional)
Instructions:
1. Cook the rice noodles according to the package instructions and drain.
2. Prepare the fillings: julienne the carrots and cucumbers, and chop the fresh herbs.
3. Fill a deep dish with warm water and soak the rice papers one at a time until soft.
4. Place the softened rice paper on a flat surface. In the center, add rice noodles, shrimp, carrots, cucumbers, herbs, and lettuce.
5. Fold the sides of the rice paper inward, then roll tightly to form a spring roll.
6. Repeat the process until all ingredients are used.
7. Serve the spring rolls with soy sauce and peanut butter if desired.
