Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 200 g fresh spinach
- 200 ml heavy cream
- 1 onion
- 2 garlic cloves
- 50 g Parmesan cheese (grated)
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain the pasta, reserving some cooking water.
2. Peel and finely chop the onion and garlic. Heat olive oil in a skillet over medium heat, then add the onion and garlic. Sauté until softened.
3. Add the fresh spinach to the skillet and cook until wilted.
4. Pour in the heavy cream and mix well. Heat the sauce, but do not let it boil.
5. Stir in the grated Parmesan cheese until melted. Season with salt and black pepper.
6. Combine the cooked pasta with the sauce. Add reserved cooking water as needed if the sauce is too thick.
7. Serve immediately and enjoy!
