Mushroom Couscous

A delicious and hearty dish combining nutty couscous with sautéed seasonal mushrooms and fresh herbs. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 2 dl couscous
- 3 dl water
- 200 g seasonal mushrooms (such as chanterelles or button mushrooms)
- 1 onion
- 2 garlic cloves
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (such as parsley or thyme)
Instructions:
1. Bring water to a boil in a saucepan and add the couscous. Remove the saucepan from heat and let the couscous steam for about 5 minutes.
2. Chop the onion and garlic. Heat olive oil in a frying pan and sauté the onion and garlic until soft.
3. Add the chopped mushrooms to the pan and cook until they are tender. Season with salt and pepper.
4. Mix the cooked mushrooms into the couscous and add the chopped fresh herbs.
5. Serve the mushroom couscous alongside falafels or your favorite protein.
