A quick and delicious pasta dish combining fresh lemon, zesty chili, and cilantro. Perfect for those "panic button" moments!Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 500 g spaghetti or other pasta - 2 cloves garlic
- 3 tablespoons oil
- 200 g shrimp
- 1 red chili
- Fresh cilantro
- 100 g grated Parmesan cheese
- 1 lemon
- Black pepper
Instructions:
1. Thaw the shrimp.2. Peel and crush the garlic cloves.
3. Grate the lemon zest and squeeze the lemon juice.
4. Slice the chili and chop the cilantro.
5. Cook the pasta in salted water according to package instructions.
6. Heat a pan and add the oil. Sauté the garlic in the oil, then add the chili.
7. When the pasta is nearly done, reserve a cup of the cooking water and add it to the pan.
8. Stir in the lemon zest and 2-3 tablespoons of lemon juice into the mixture.
9. Drain the pasta and pour the mixture over it.
10. Add the grated Parmesan cheese and shrimp. Toss everything together well.
11. Finish with a sprinkle of chopped cilantro.
