Ingredients:
- 250 g pasta (e.g., spaghetti or penne)
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 150 g cherry tomatoes, halved
- 100 g spinach
- Salt and pepper to taste
- Fresh basil for garnish
- Parmesan cheese for serving (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and set aside.
2. Heat olive oil in a large pan over medium heat. Add onion and garlic, sautéing for about 2-3 minutes until softened.
3. Add the bell pepper and zucchini to the pan. Cook for about 5-7 minutes until the vegetables are tender.
4. Stir in the cherry tomatoes and spinach. Cook for a few more minutes until the spinach has wilted.
5. Mix the cooked pasta with the vegetables. Season with salt and pepper to taste.
6. Serve the dish garnished with fresh basil and optionally top with Parmesan cheese.
