A traditional Finnish liver casserole, rich in flavor and perfect for a comforting meal. Preparation Time: 1 hour 30 minutes
Serving Size: 4-6 servings
Ingredients:
- 400 g beef liver
- 2 dl rice
- 1 l water
- 2 onions
- 1 dl cream
- 1 dl milk
- 2 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp nutmeg
- 2 eggs
- 1 dl breadcrumbs
Instructions:
1. Cook the rice in salted water until tender, then let it cool.
2. Chop the onions and sauté them in butter in a pan until soft.
3. Mince the beef liver and mix it with the sautéed onions.
4. Add the cooled rice, cream, milk, black pepper, nutmeg, and eggs. Mix well.
5. Grease a baking dish and sprinkle breadcrumbs on the bottom.
6. Pour the liver and rice mixture into the dish and smooth the top.
7. Sprinkle more breadcrumbs on top.
8. Bake at 175 °C for about 1 hour, until the top is golden brown.
9. Let it cool slightly before serving.
