Ingredients:
- 200 g digestive biscuits - 100 g butter
- 600 g cream cheese
- 150 g sugar
- 3 eggs
- 200 ml heavy cream
- 1 tsp vanilla extract
- 2 tbsp lemon juice
Instructions:
1. Preheat the oven to 175°C (350°F). 2. Crush the digestive biscuits into fine crumbs and mix with melted butter.
3. Press the biscuit mixture firmly into the bottom of a springform pan.
4. In a bowl, beat the cream cheese and sugar until smooth.
5. Add the eggs one at a time, mixing well after each addition.
6. Stir in the heavy cream, vanilla extract, and lemon juice until well combined.
7. Pour the cheese mixture over the biscuit base and smooth the top.
8. Bake in the oven for about 50-60 minutes, until the cake is set.
9. Allow the cake to cool at room temperature, then transfer to the refrigerator for at least 4-6 hours before serving.
