A rich and delicious New York Cheesecake, easy to make and topped with fresh berries. This cake is the perfect dessert for celebrations or everyday treats. Preparation Time: 1 hour + 4 hours chilling time
Serving Size: 12 servings
Ingredients
- Crust:- 200 g Digestive biscuits
- 100 g butter, melted
- 1/2 tsp cinnamon
- Filling:
- 3 packs (200 g each) cream cheese, plain
- 250 g sugar
- 3 eggs
- 1 tbsp grated lime or lemon zest
- 2 tsp vanilla sugar
- 1 pack (150 g) crème fraîche
- Topping:
- 2 packs (150 g each) crème fraîche
- 2 tbsp sugar
- 2 tsp lime or lemon juice
- Fresh berries for decoration
Instructions
1. Crush the Digestive biscuits and mix them with melted butter and cinnamon until smooth.2. Press the mixture into the bottom and sides of a greased springform pan (Ø 24 cm). Place the pan in the refrigerator to set while preparing the filling.
3. Beat the cream cheese in a bowl with an electric mixer for about a minute.
4. Add the sugar and continue mixing. Add the eggs one by one while mixing.
5. Stir in the lime zest, vanilla sugar, and crème fraîche until well combined.
6. Pour the filling over the crust and bake in the center/lower part of the oven for about 45 minutes.
7. Turn off the oven and let the cake continue baking in the residual heat with the oven door slightly ajar for about 1 hour.
8. Prepare the topping by mixing crème fraîche, sugar, and lime or lemon juice together. Spread the topping over the cake.
9. Cover the cake loosely with plastic wrap and refrigerate for at least 4 hours to set.
10. Remove the cake from the pan and decorate with fresh berries before serving.
