Ingredients:

- 200 g digestive biscuits
- 100 g butter
- 600 g cream cheese
- 200 g sugar
- 3 eggs
- 100 ml sour cream
- 2 tbsp cornstarch
- 1 tbsp vanilla sugar
- Zest of 1 lemon
- 1 tbsp lemon juice

Instructions:

1. Preheat the oven to 175°C (350°F).
2. Crush the digestive biscuits into fine crumbs and mix with melted butter. Press the mixture firmly into a springform pan.
3. In a bowl, beat the cream cheese and sugar until smooth and fluffy.
4. Add the eggs one at a time, mixing well after each addition.
5. Add the sour cream, cornstarch, vanilla sugar, lemon zest, and lemon juice. Mix until well combined.
6. Pour the filling over the biscuit base and smooth the surface.
7. Bake in the oven for about 50-60 minutes, until the cake is set. Allow to cool at room temperature, then refrigerate for at least four hours.
8. Optionally, top with berries or whipped cream before serving.
