A stunning and delicious New York cheesecake, perfect for special occasions. Preparation Time: 1 hour + chilling time
Serving Size: 12-14 servings
Ingredients:
- 200 g digestive biscuits
- 100 g butter
- 600 g cream cheese
- 200 g sugar
- 3 eggs
- 2 dl heavy cream
- 1 tsp vanilla sugar
- Juice of 1 lemon
- Zest of 1 lemon
Instructions:
1. Preheat the oven to 175°C (350°F).
2. Crush the digestive biscuits into fine crumbs and mix with melted butter. Press the mixture firmly into the bottom of a springform pan.
3. In a bowl, beat the cream cheese and sugar together until smooth.
4. Add the eggs one at a time, mixing well after each addition.
5. Stir in the heavy cream, vanilla sugar, lemon juice, and lemon zest until all ingredients are well combined.
6. Pour the cheese mixture over the biscuit base and smooth the top.
7. Bake in the oven for about 50-60 minutes, until the edges are set but the center is still slightly soft.
8. Turn off the oven and leave the cheesecake inside for an additional hour. Allow it to cool at room temperature, then refrigerate for at least 4 hours or overnight.
9. Optionally, garnish with fresh berries before serving.
