A creamy and spicy Italian risotto featuring nduja, a flavorful spreadable salami. Perfect for a cozy dinner. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 dl risotto rice
- 1 dl nduja (spicy Italian salami spread)
- 1 onion
- 2 garlic cloves
- 1 l vegetable or chicken broth
- 1 dl white wine
- 50 g Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (e.g., parsley) for garnish
Instructions:
1. Peel and finely chop the onion and garlic.
2. Heat the olive oil in a pot and sauté the onion and garlic until soft.
3. Add the risotto rice and stir until the rice becomes slightly translucent.
4. Pour in the white wine and stir until it is almost fully absorbed by the rice.
5. Mix in the nduja and stir well.
6. Gradually add the hot broth, about 1 dl at a time, stirring continuously. Add more broth only after the previous amount has been absorbed.
7. Continue cooking for about 18-20 minutes until the rice is al dente.
8. Remove the pot from heat and stir in the Parmesan cheese. Season with salt and pepper.
9. Serve the risotto on plates and garnish with fresh herbs before serving.
