Creamy Spinach and Mushroom Pasta

Ingredients:
- 300 g pasta (e.g., penne or spaghetti)
- 200 g fresh spinach
- 150 g mushrooms (e.g., button mushrooms)
- 100 ml cream
- 1 small onion
- 2 garlic cloves
- 2 tbsp olive oil
- Salt and pepper to taste
- Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain the pasta and reserve a little cooking water.
2. Chop the onion and garlic. Slice the mushrooms.
3. Heat olive oil in a skillet over medium heat. Add the onion and garlic and sauté until soft.
4. Add the mushrooms and cook until they are golden brown.
5. Stir in the fresh spinach and cook until wilted.
6. Pour in the cream and mix well. Heat the mixture over low heat.
7. Season the sauce with salt and pepper.
8. Toss the cooked pasta into the sauce. If needed, add a bit of reserved cooking water to achieve the desired consistency.
9. Serve immediately, and sprinkle with Parmesan cheese if desired.
