A delicious raw treat combining the freshness of lemon and berries, perfect for a Thursday night. Easy to prepare without an oven! Preparation Time: 30 minutes + 2 hours in the fridge
Serving Size: 12 pieces
Ingredients:
- 2 dl nuts (e.g., walnuts or almonds)
- 1 dl rolled oats
- 1 dl dates (soaked)
- 1 dl shredded coconut
- 2 tablespoons honey or maple syrup
- Juice and zest of 1 lemon
- 1 dl berries (e.g., raspberries or blueberries)
- 1/2 dl coconut oil (melted)
Instructions:
1. Rinse and soak the dates for about 10 minutes.
2. In a blender, combine nuts, rolled oats, and shredded coconut until finely ground.
3. Add the soaked dates, honey, lemon juice, and zest to the mixture. Blend until smooth.
4. Gently fold in the berries and melted coconut oil.
5. Spread the mixture into a parchment-lined dish (about 20x20 cm) and press down firmly.
6. Place the dish in the fridge for about 2 hours to set.
7. Cut into pieces and serve.
