These veggie patties are nutritious and flavorful, making them a perfect option for lunch or dinner.

Serving Size: 4 patties
Ingredients:
- 1 cup cooked chickpeas
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 cup grated carrot
- 1 cup chopped spinach
- 1/2 cup rolled oats
- 1/4 cup fresh parsley, chopped
- 1 tsp cumin
- Salt and pepper to taste
- 2 tbsp olive oil for frying
Instructions:
1. Mash the chickpeas in a bowl with a fork or another tool until roughly smooth.
2. Add the onion, garlic, carrot, spinach, oats, parsley, and spices to the chickpeas. Mix well.
3. Shape the mixture into 4 patties.
4. Heat olive oil in a frying pan over medium heat.
5. Fry the patties for about 5-7 minutes on each side, until golden brown.
6. Serve warm, with a side salad or dip.
