A delightful and nourishing mushroom soup that transports you to the forest through flavors. Made with fresh mushrooms, this soup is the perfect autumn treat. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g fresh mushrooms (e.g., chanterelles or porcini)
- 1 onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and chop the onion and garlic.
2. Clean the mushrooms and chop them into your desired size.
3. Heat the butter in a pot and sauté the onion and garlic until they are soft.
4. Add the mushrooms to the pot and cook for a few minutes until they are slightly tender.
5. Pour the vegetable broth into the pot and let the soup simmer for about 10 minutes.
6. Add the heavy cream to the soup and mix well. Season with salt and pepper.
7. Let the soup simmer for a few more minutes and serve hot, garnished with fresh parsley.
