A rich and flavorful creamy mushroom soup, perfect as a starter or a light main dish. Quick and easy to make, it takes only about 30 minutes. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g fresh mushrooms - 1 onion
- 2 garlic cloves
- 3 tbsp butter
- 1 liter vegetable broth
- 200 ml cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Clean the mushrooms and chop them into small pieces. Peel and finely chop the onion and garlic. 2. In a large pot, heat the butter over medium heat. Add the onion and garlic, sautéing for about 5 minutes until soft.
3. Add the chopped mushrooms to the pot and cook for a few minutes until they are slightly browned.
4. Pour in the vegetable broth and let the soup simmer for about 10 minutes.
5. Blend the soup with an immersion blender or in a regular blender until completely smooth.
6. Stir in the cream and mix well. Heat the soup again, but do not bring it to a boil.
7. Season with salt and pepper. Serve hot, garnished with fresh parsley.
