Black Rice Salad with Arugula and Goat Cheese

Ingredients:
- 1 dl black rice
- 2 dl water
- 100 g arugula
- 100 g goat cheese
- 1 dl cherry tomatoes
- 1/2 red onion
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Cook the black rice with water according to the package instructions. Allow it to cool.
2. Chop the red onion and halved cherry tomatoes.
3. In a large bowl, combine the cooled rice, arugula, red onion, and cherry tomatoes.
4. Crumble the goat cheese over the salad.
5. Prepare the dressing by mixing olive oil, balsamic vinegar, salt, and pepper.
6. Drizzle the dressing over the salad and mix well.
7. Serve immediately and enjoy your delicious salad!
