Mummolan Pannukakku

A delicious Finnish oven pancake, perfect for brunch or dessert. Preparation Time: 1 hour
Serving Size: 8 servings
Ingredients:
- 5 dl all-purpose flour
- 1 tsp salt
- 2 tbsp sugar
- 4 eggs
- 1 liter milk
- 50 g melted butter or liquid baking fat
Instructions:
1. In a large bowl, mix the flour, salt, and sugar together.
2. Add the eggs and mix well until combined.
3. Gradually add the milk in three parts, whisking thoroughly after each addition to avoid lumps.
4. Let the batter rest for about 30 minutes.
5. Stir the melted butter into the batter just before baking.
6. Line a baking sheet with a sufficiently large piece of parchment paper and pour the batter onto it.
7. Bake the pancake in the oven at 225°C (437°F) for about 30 minutes, or until golden brown.
Serve the pancake with strawberry puree and whipped vanilla cream.
