A delicious spiced cake enhanced with cherries, mixed fruits, and almond flakes, this egg-free cake is perfect for festive occasions!
Preparation Time: 1.5 hours
Serving Size: 1 large cake or 2 smaller cakes

Ingredients:

- 2 dl sugar
- 2 dl dark syrup
- 3 dl buttermilk
- 2 dl melted butter (200g)
- 1 tsp cloves
- 3 tsp cinnamon
- 1 tsp cardamom
- 1 tsp orange peel
- 1.5 tsp baking soda
- 1.5 tsp baking powder
- 6 dl all-purpose flour
- 75 g candied cherries
- 100 g mixed fruit
- 0.5 dl almond flakes
- For greasing: butter/margarine and breadcrumbs

Instructions:

1. In a large bowl, mix all the ingredients together until well combined.
2. Grease and flour a cake pan.
3. Pour the batter into the prepared pan, leaving enough space for rising.
4. Bake at 200°C (392°F) on the middle rack for about 1 hour. Check for doneness with a cake tester.
5. Be careful not to overbake to avoid a dry cake. Cover with foil if necessary during baking.
