Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g. spaghetti or fusilli)
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g spinach (fresh or frozen)
- Salt and black pepper to taste
- Fresh basil for garnish (optional)
- Grated Parmesan cheese for serving (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water until al dente. Drain and reserve a little cooking water.
2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft.
3. Add the crushed garlic and diced bell pepper. Cook for a few minutes until the pepper softens.
4. Add the sliced zucchini and cherry tomatoes to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
5. Stir in the spinach and cook until it wilts. Season with salt and black pepper.
6. Mix the cooked pasta into the vegetable mixture. Add a little reserved cooking water if needed to keep the pasta moist.
7. Serve immediately, garnished with fresh basil and grated Parmesan cheese if desired.
