This delicious TexMex tortilla recipe combines a flavorful filling with soft tortillas. Perfect for busy days or weekend indulgence!

Ingredients:

- 4-6 tortillas
- 400 g ground beef (or chicken)
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 can black beans, rinsed
- 1 can corn
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 200 g shredded cheese (e.g., cheddar)
- 1 avocado, mashed
- 100 ml pico de gallo salsa (or fresh tomato, onion, and cilantro)
- Sour cream or yogurt for serving

Instructions:

1. Heat a skillet over medium heat and add the chopped onion and minced garlic. Sauté until the onions are soft.
2. Add the ground meat to the skillet and brown it. Season with chili powder, cumin, salt, and pepper.
3. Stir in the rinsed black beans and corn. Mix well and cook for a few more minutes.
4. Take the tortillas and fill them with the meat mixture. Sprinkle shredded cheese on top.
5. Fold the tortillas in half and cook them in a dry skillet until the cheese melts and the tortillas are golden brown.
6. Serve warm with mashed avocado, pico de gallo, and sour cream.
