A spicy and savory rice dish with black beans and corn, perfect as a side or main dish.

Ingredients:
- 2 dl long-grain rice
- 4 dl chicken or vegetable broth
- 1 can black beans, rinsed and drained
- 1 dl corn (frozen or canned)
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1-2 chipotle chiles in adobo sauce, finely chopped
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp oil
- Fresh cilantro for garnish
Instructions:
1. Heat the oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until soft.
2. Add the crushed garlic and chipotle chili. Cook for another minute.
3. Stir in the rice and cook, stirring frequently, until it gets slightly toasted, about 2-3 minutes.
4. Pour the broth over the rice and add the black beans, corn, cumin, salt, and black pepper.
5. Bring the mixture to a boil, then reduce the heat and cover. Let it simmer on low for about 15-20 minutes, until the rice is tender and the liquid is absorbed.
6. Fluff the cooked rice with a fork and mix in fresh cilantro before serving.
7. Serve the rice alongside grilled dishes or as part of a Tex-Mex meal.
