Ingredients:
- 200 g pasta (e.g., spaghetti)
- 100 g bacon or pancetta
- 2 eggs
- 50 g Parmesan cheese (grated)
- 1 garlic clove (minced)
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. Cut the bacon or pancetta into small pieces and fry them in a pan over medium heat until crispy.
3. Add the minced garlic to the pan and sauté for another minute until golden brown.
4. In a bowl, whisk together the eggs, grated Parmesan cheese, salt, and black pepper.
5. Once the pasta is cooked, drain it and reserve a little cooking water.
6. Add the pasta to the pan with the bacon and garlic, and mix well.
7. Remove the pan from heat and pour the egg mixture over the pasta. Stir quickly to cook the eggs without scrambling them. If needed, add a little reserved cooking water for a creamy consistency.
8. Serve immediately, garnished with fresh parsley and additional Parmesan cheese.
