Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 250 g cherry tomatoes
- 200 g mozzarella cheese
- 2 tbsp olive oil
- 2 garlic cloves
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain and reserve a small amount of pasta water.
2. Halve the cherry tomatoes and cube the mozzarella cheese.
3. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about a minute.
4. Add the cherry tomatoes to the skillet and cook until they start to soften (about 3-5 minutes).
5. Toss the cooked pasta with the tomatoes and add a little reserved pasta water if needed. Season with salt and pepper.
6. Remove the skillet from heat and add the mozzarella pieces. Gently mix until the cheese begins to melt.
7. Serve the pasta garnished with fresh basil.
