Ingredients:

- 3 tablespoons olive oil
- 2 onions, chopped
- 4 cloves garlic, crushed
- 4 carrots, diced
- 3 celery stalks, chopped
- 2 potatoes, diced
- 1 bell pepper, chopped
- 1 zucchini, diced
- 400 g crushed tomatoes
- 2 liters vegetable broth
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 100 ml fresh parsley, chopped

Instructions:

1. Heat olive oil in a large pot over medium heat.
2. Add chopped onions and crushed garlic; sauté until softened.
3. Add carrots, celery, potatoes, bell pepper, and zucchini. Cook for about 5-7 minutes.
4. Pour in crushed tomatoes and vegetable broth. Stir well.
5. Season with salt, black pepper, oregano, and thyme.
6. Let the soup simmer on low heat for about 30 minutes, until all vegetables are tender.
7. Stir in chopped parsley just before serving.
8. Serve the soup warm with bread.
