This delicious and nutritious vegetable pasta is quick to prepare, making it perfect for a weeknight dinner.

Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 1 tsp dried oregano
- Salt and pepper to taste
- 50 g Parmesan cheese, grated (optional)
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain, reserving a little pasta water.
2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté for about 3-4 minutes until softened.
3. Add the bell pepper and zucchini, and cook for another 5-7 minutes until the vegetables are tender.
4. Stir in the cherry tomatoes and oregano, and cook for a few more minutes until the tomatoes soften.
5. Toss the cooked pasta into the vegetable mixture. If needed, add a bit of reserved pasta water to make it more saucy. Season with salt and pepper.
6. Serve warm, topped with grated Parmesan cheese and fresh basil if desired.
