Ingredients:
- 200 g fresh chanterelles - 200 ml oat cream
- 2 tablespoons light miso paste
- 1 tablespoon olive oil
- 1 onion
- 2 garlic cloves
- 1 tablespoon fresh parsley (chopped)
- Salt and pepper to taste
Instructions:
1. Peel and chop the onion and garlic. 2. Heat olive oil in a skillet over medium heat. Add the onion and garlic, and sauté until soft.
3. Add cleaned and chopped chanterelles to the skillet. Cook for a few minutes until they start to brown.
4. Mix the miso paste with the oat cream and pour the mixture into the skillet. Stir well.
5. Allow the sauce to simmer on low heat for about 5-10 minutes until it thickens.
6. Season with salt, pepper, and chopped parsley. Serve immediately with new potatoes.
