A colorful autumn salad that makes a delightful lunch on its own or as part of a hearty dinner.

Serving Size: 4 servings

Ingredients:

- 200 g kale
- 1 large sweet potato
- 1 red onion
- 1 red bell pepper
- 1/2 dl olive oil
- Salt and pepper to taste
- 1/2 dl light miso paste
- 2 tablespoons honey
- 2 tablespoons soy sauce
- Juice of 1 lemon
- Juice of 1 orange
- 1/4 dl water
- Fresh herbs (e.g., parsley or cilantro) for garnish

Instructions:

1. Preheat the oven to 200°C (400°F).
2. Peel and dice the sweet potato. Slice the red onion and red bell pepper into strips.
3. Place the sweet potato, red onion, and red bell pepper on a baking sheet. Drizzle with olive oil, and season with salt and pepper. Toss well.
4. Roast in the oven for about 20 minutes, until the vegetables are tender and slightly browned.
5. Meanwhile, prepare the miso dressing. In a bowl, mix together the miso paste, honey, soy sauce, lemon juice, orange juice, and water. Stir until smooth.
6. Sauté the kale in a small amount of oil in a pan for about 3-5 minutes, until it slightly wilts.
7. Combine the roasted vegetables and sautéed kale in a large serving bowl. Drizzle the miso dressing over the salad and toss gently to combine.
8. Garnish with fresh herbs before serving.
