These delicious roasted Brussels sprouts are coated in a flavorful miso, Dijon mustard, and maple syrup glaze, then topped with crunchy walnuts for a perfect side dish.
Ingredients:
- 500 g Brussels sprouts
- 2 tbsp miso paste
- 1 tbsp Dijon mustard
- 2 tbsp maple syrup
- 2 tbsp olive oil
- Salt and pepper to taste
- 50 g walnuts (or other nuts/pumpkin seeds)
Instructions:
1. Preheat the oven to 200°C (400°F).
2. Clean and trim the Brussels sprouts, cutting them in half.
3. In a bowl, mix the miso paste, Dijon mustard, maple syrup, and olive oil. Season with salt and pepper.
4. Add the Brussels sprouts to the mixture and toss until they are evenly coated.
5. Spread the Brussels sprouts on a baking sheet lined with parchment paper.
6. Roast in the oven for about 20-25 minutes, or until they are golden brown and crispy.
7. Chop the walnuts and sprinkle them over the roasted Brussels sprouts before serving.
8. Serve warm as a delicious side dish.
