Ingredients:

- 300 g pasta (e.g., spaghetti or fusilli)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 150 g fresh mushrooms, sliced
- 200 g cherry tomatoes, halved
- 100 g spinach
- Salt and pepper to taste
- Fresh basil for garnish
- Parmesan cheese (optional)

Instructions:

1. Cook the pasta in salted water according to package instructions until al dente. Drain and reserve a little cooking water.
2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and crushed garlic, and sauté for about 2-3 minutes.
3. Add the bell pepper and zucchini to the skillet. Cook until the vegetables soften, about 5-7 minutes.
4. Stir in the mushrooms and cherry tomatoes. Cook for a few more minutes until the tomatoes begin to soften.
5. Add the spinach and stir until wilted. Season with salt and pepper.
6. Add the cooked pasta to the skillet and mix well. If needed, add a little reserved cooking water to make the mixture creamier.
7. Serve immediately garnished with fresh basil and grated Parmesan cheese.
