Ingredients:
- 1.5 kg pork shoulder- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 2 tsp cumin
- 2 tsp smoked paprika
- 1 tsp cayenne pepper
- 1 tsp cinnamon
- 3 garlic cloves, minced
- Juice of 1 lime
- 2 cups chicken or vegetable broth
- 1 red chili, chopped
- Fresh cilantro for garnish
Instructions:
1. Heat the olive oil in a large skillet over medium heat.2. Season the pork shoulder with salt, black pepper, cumin, smoked paprika, cayenne pepper, and cinnamon. Rub the spices onto the surface of the meat.
3. Sear the pork shoulder in the skillet until it is browned on all sides.
4. Add the minced garlic, lime juice, chili, and broth to the skillet. Reduce the heat to low and cover with a lid.
5. Allow the meat to cook on low heat for about 3-4 hours, until it is tender and easily shredded.
6. Remove the meat from the skillet and shred it with a fork. Mix the shredded pork back into the skillet to absorb the flavors.
7. Serve the pulled pork in tacos, burritos, or salads. Garnish with fresh cilantro.
