A delicious and quick addition to your Christmas table, made from fresh sprats and seasoned with marjoram and yellow mustard seeds. This recipe is perfect for a last-minute treat for celebrations. Preparation Time: 30 minutes + 2-3 hours marinating
Serving Size: 4-6
Ingredients:
- 500 g fresh sprats- ¼ dl cane sugar
- ¼ dl fine sea salt
- ¼ dl white vinegar
- 5 dl water
- 5 cloves
- 1 tsp yellow mustard seeds
- 1 tsp whole white peppercorns
- 1 bunch marjoram
- 1 onion
Instructions:
1. Rinse the marjoram thoroughly and let it dry.2. Crush the white peppercorns in a mortar until finer.
3. Peel the onion and slice it into thin rings.
4. Measure the water, cane sugar, sea salt, and white vinegar into a pot. Add the onion, cloves, marjoram, and crushed white peppercorns.
5. Bring the marinade to a boil and simmer for about ten minutes.
6. Remove the pot from heat and let the marinade cool completely.
7. Clean the sprats, removing the large fins and backbone, but keep the tails intact.
8. Roll the sprats and pack them tightly in a container.
9. Pour the cooled marinade over the sprats so that they are completely submerged.
10. Cover the container tightly with plastic wrap and place it in the refrigerator to marinate for about 2-3 hours before serving.
